Games that use dice and the dice themselves goes all the way back to the Middle Eastern Crusades, but modern craps is just about 100 years old. Modern craps evolved from the old English game called Hazard. Nobody absolutely knows the origin of the game, although Hazard is believed to have been created by the Englishman, Sir William of Tyre, sometime in the 12th century. It’s presumed that Sir William’s paladins wagered on Hazard during a blockade on the fortress Hazarth in 1125 AD. The title Hazard was acquired from the fortification’s name.
Early French colonizers brought the game Hazard to Nova Scotia. In the 18th century, when exiled by the British, the French moved down south and located sanctuary in southern Louisiana where they a while later became known as Cajuns. When they departed Acadia, they took their preferred game, Hazard, along. The Cajuns modernized the game and made it mathematically fair. It is believed that the Cajuns altered the title to craps, which was acquired from the term for the non-winning throw of two in the game of Hazard, recognized as "crabs."
From Louisiana, the game extended to the Mississippi barges and all over the country. A few think the dice builder John H. Winn as the founder of modern craps. In 1907, Winn created the modern craps layout. He added the Do not Pass line so gamblers could bet on the dice to lose. Later, he designed the boxes for Place wagers and put in place the Big 6, Big 8, and Hardways.
